Midnight Berry Mocktail
Ring in the new year with this non-alcoholic treat.
2 cups pomegranate juice
3/4 cup blackberries
2 Tbsp roughly chopped fresh rosemary, woody stems removed
1 Tbsp finely chopped fresh ginger
¼ cup maple syrup
Blackberry bubly
Make the blackberry pomegranate syrup. Combine first four ingredients in a small saucepan, bring to a boil then cover and simmer on low for 20 minutes. Strain into a jar, stir in maple syrup, and set aside to cool. You can keep this in the fridge and pull it out whenever you're ready to make a drink.
Put some ice in a glass, add ¼ cup of the cooled syrup, top with blackberry bubly. Stir, add some garnish if you like, and enjoy!
*Add more or less syrup to adjust the sweetness of the drink to your taste.
