Mike’s Cinnamon Buns
Perfect for lazy mornings in that foggy haze between Christmas and New Years.
Dough
1 c. milk
2 eggs
⅓ c. dairy free butter
4 ½ c. flour
1 tsp. salt
½ c. sugar
2 ½ tsp. yeast
We usually throw all the dough ingredients in our bread maker on the dough setting. If you don’t have a bread maker, you could just mix everything together and knead by hand for a few minutes, then let the dough sit in a covered bowl to rise for about 30 minutes.
Filling
½ c. packed brown sugar
2 ½ tbsp. cinnamon
⅓ c. dairy free butter, softened
Once the dough is ready, roll into a rectangle approximately 16 x 21”. Mix the filling ingredients together and spread evenly on the dough. Roll up and cut into 12 rolls. Place rolls in a lightly greased 9 x 13” baking pan. Cover and let rise again for about 30 minutes.
Preheat oven to 400’F. Bake rolls in oven until golden brown, about 15 minutes.
